Friday, July 30 2010 - Prison Wine

Prison wine....or prison hooch is commonly made in the cell toilet. The better choice, however, is to brew it in a trash bag.

Step #1: Make a strong bag by double or triple-bagging plastic trash bags.
Step #2: Pour warm water, your choice of fruit or fruit juice, raisins, tomatoes, yeast, and as much sugar as you can get. If sugar is not on hand, powdered drink mix will work also (kool-aid).
Note: Add yeats (Many prisons make yeast illegal on the premises. In this case moldy bread does just fine. Slices should be moist and can be put in a sock to strain any stray elements.)
Step #3: Tie off the bag with a knot. Penetrate the bag with a straw, or some other type of tube to allow carbon dioxide to release.
Step #4: Hide the bag where your prison guard can't see it. Three days is enough, if you really can't wait. A week is a more reasonable time. Normal wine takes around a month to brew.

It is crucial that you hide the smell. Burning incense or spraying deodorant can help.

Fill Rox glass 1/2 - 3/4 full of slush mix

Friday, May 7 2010 - The "Jean Lafitte" From Brennan's bartender Alex Gregg:

In the base, the green part, combine:
1.5 oz Lt Rum
1 Scoop Vanilla Bean Ice Cream
1/4 of one medium sized Avocado (smaller ones use more, bigger ones, you get it)
.5 oz Fresh Lime Juice
.5 oz Fresh Lemon Juice
.5 oz Simple Syrup (you could leave out for a more tart libation, or for health)
Ice
Blend.

In the topping:
1 oz Half and Half
1 small Egg White
.75 oz orange Liqueur
.25 oz Orange Juice
Shake vigorously, then shake some more. At that point you're halfway done shaking. I'm not kidding. This is very important. You should have to switch arms at least three times. If you skimp on this, just dont do it okay.

Just pour the frozen mixture so it fills the glass 3/4. Then strain the meringue topping. Garnish with a twist of orange.

Ingredients For 2 Cocktails

  • 3 tablespoons sea salt
  • 1 tablespoon plus 1/4 teaspoon
    smoked paprika,* divided
  • 1/2 cup fresh lime juice
  • 6 tablespoons agave nectar
  • 2 ounces tequila

Preparation

  • Mix sea salt and 1 tablespoon of the smoked paprika on a small plate. Wet outside rims of margarita or other beverage glasses with lime wedge. Dip glasses into sea salt mixture to coat.
  • Fill cocktail shaker with 2 cups of ice. Add lime juice, agave nectar, tequila and remaining 1/4 teaspoon smoked paprika; shake until well mixed and chilled. Immediately pour into prepared glasses.

*The regular paprika you have in the spice cabinet is probably sweet paprika. Spanish smoked paprika is a special kind, smoked over oak fires so it takes on a smoky flavor. In Hungary, there are six classes, or types, of paprika ranging from delicate to hot. In order to achieve the flavors of this recipe, you will need to use Spanish smoked paprika.

This week's show should showcase Jimmy Buffett who's concert is this Thursday at The Woodland's. Not only is he a great songwritter with perplexing lyrics that hit you after you've sung the ballad, he's a great environmentalist and lover of nature and the seas. My husband, who passed away of a sudden Heart Attack at age 51, brought JB's A-1 A album with him from Tennessee when he moved here in 1981 and turned many into JB fans who had never heard of him. It's JB's 1st time back in 2 years. Can't wait for the big show "Under the Big Top." Please play some of his "homemade music" on the radio for us forever fans since it is rarely played.
He recently was in Haiti but you won't hear much about it because he's not that kind of guy. My son actually bought me the tickets for mother's day and it will be our first concert together. Is there any way you know of to get either more lawn seats or even covered seating?
I would love to have an opportunity at some.
